Finocchietta Salami, La Salumina

In Sullivan County, just over an hour away, is a husband and wife team and Italian-born Salumi processor that uses local pigs from Margaretville & the Hudson Valley. 

STORY: Finocchietta is the baby cousin of Finocchiona, a traditional larger format salame with fennel seeds.

SPICES: Fennel, black pepper, garlic and red wine.

PROFILE: Earthy, hints of anise, tickle of black pepper, with a gentle tang.
